Scott's Coconut Macaroons

- Preheat oven to 320.

- Use food processor to mix 1/2 cup almonds and 7 dates until it's a course texture.

- Add 1 cup shredded coconut, 1 Tb cacao powder & 1 Tb vanilla.  Mix well.

- Add 4 egg whites, 1 more cup shredded coconut & 2 Tb coconut oil.  Pulse quickly.

- Form into balls on parchment paper lined baking sheet.

- Bake for 2 minutes!
